Please tell me someone out there relates!

Sorry to all of those of you who are sick of posts about health food, it will be tapering off ASAP. But before I do, I started thinking about a post dedicated to Heather and her new love of flax / linseeds {and all others out there who have commented or not but have tried recently or been doing it for years}. As I thought about what I wanted to say for over a week now, this post has kind of evolved so stay with me, it is kind of wordy, but there might be some good stuff in there, who knows?
First of all, I can't believe how much the flax is working for me, keep reading, I'm not going to go into details about being regular! I fought and fought using them or getting "healthier" for a long time because anytime I hear about such things I think of tofu or nasty, dry, tasteless bran muffins. It is really true though, what has been said about tasting them. If there is any discernible difference in taste, then I like it. I have been tempted to go back and list them in to all of my recipes that I use them in, but I don't want to push it on anybody. That, and I'm lazy. However, I have been adding flax, phsylium husk, and soy LSA complex into Caramel Oaty Bars and I swear to you they have NEVER TASTED BETTER! {Which is not a good thing...}
Further, I am amazed at how the change in adding in one ingredient has inspired my whole life and my whole routine. I am now regularly exercising 3-6 days a week. Despite the fact that I got my brand new car this week, I have continued to ride my bike more often than drive anywhere. I take Laine to and from pre-school in it, we go to the park, I have even walked to 1/2 hour to the grocery store. It has been so good for me, but even better for my kids!
My fruit bowl is now more than a decoration, it is filled with fruits that I actually think to serve myself {I have always been pretty good about making the kids eat it, and we're great with veggetables, but I am usually hiding behind an open cupboard and shoving a cookie in my mouth and Laine is saying "Mommy, what you doing, what's that, what you eating?" and I say "Vegetables!, now eat your banana"}. I take healthy snacks with me on the go. I feel like the chains desserts have been weakened, though they are still pretty strong and I did take a step backwards this week as Ben has been out of town the last few days and I can eat and eat with no one seeing how much!
Anyway, I am not going to go back and list the flax / linseeds or psylium husk that I add in to every recipe, but just know that I add it into all of my breads, crackers, waffles / pancakes, oatmeal, and some desserts, I'll try it with anything, but there are obviously some things that it lends it's self better to than others, there may be some occasional updates since it has only been 3 weeks. One thing I also added it to was breading for chicken breasts. I, of course, used whole-wheat flour as well, something so simple but I had never thought of it before.
In the title of this post, I am asking for those who relate to my plight. Here I am going along in my life, and most people around me know that I love to cook and some people hear about my blog or other things I've made and my reputation kind of precedes me. It makes it difficult and there is a lot of pressure when I have to entertain or I have to bring a dish to a party, etc. I've always cooked reasonably healthy, but now I have stepped it up a notch. I just feel like I am never going to parties where other guests are tasting food and someone else says, "oh, you like that, well, eat it guilt-free because it the sugar has been halved, the butter has been cut by 1/3, the flour is whole wheat, and it has this and that healthy stuff added to it...". No one ever says that but me! My food is constantly compared to food that is full-fat, full-sugar, white-flour, etc. Does anyone feel me on this? I know I am not the healthiest nut out there. I know there are people that are spraying their cinnamon rolls with pam and using non-fat cheese and are adding tofu to everything. I am just trying to have a nutritional / taste balance. My stuff tastes better to me than it's fatty /sugary cousins, because I know I am not just satisfying my sweet tooth or hunger, I am giving my body needed nutrients. But I am not sure other people are getting it! It frustrates me a little bit, and I feel like I shouldn't even need to put the disclaimer on my food. I know it is good and tastes good, why do I care what anybody else thinks? But I do.
Anyway, I also want to again let people know not to feel guilt if they are making the full-fat, full sugar food. If you aren't into it, you're not into it. For me, I think it is the season of life that I am in. I've been pregnant or nursing or have had small babies. Now that I am done having kids and Gabe is getting a little bit older, we are going and doing more. And I don't have any excuses looming. It was just the right time for this new awakening in my life, so don't feel bad if it is not your time yet! Thanks for letting me get on my soap box once more. I have two fabulous recipes I will be posting in the next few days, so stay tuned!

Way to go Nat! I have been using the flax seed, but not sure about the other stuff you talked about. What are they? Where do you find the other 2 things you mention in your post?

Psyllium husk is just basically almost straight fiber. It is not like the seeds or meals, it goes gluey in liquid. I add it to my pie crust and my oaty bars and it turns out great when it is something dry or crumbly that you are baking.

The Soy LSA complex has soy, obviously, almond meal, flax / lineseed meal {flax and linseed are the same thing, they just call it linseed here so I write it for a few people that check my blog internationally}, and sunflower meal. It adds a really nice nutty flavor to deserts!

I just bought them both in the natural health section of my grocery store, and I've seen them in a little tiny health food store that I go to. We don't have a wild oats close apperantly, but I saw one in the city last time I was there, otherwise I would have gone there for my inspiration!

Nat, I love you!!! You are so cute. I totally agree with you, you have to be in the right frame of mind to be using health conscious ingredients. It does take a little extra effort and planning but in the end it is so worth it. I can't wait to see the recipes because I have only used the flax in those waffles and I made a strawberry smoothie the other day with flax and spinach in it and it tasted fantastic. Who would have thought? I really want to get Jessica Seinfeld's Deceptively Delicious cookbook too for more inspiration. Have you looked at that before?

Hey Nat, thanks for your comment on my blog. I only started the blog to try and keep up with friends overseas. So far so good. As for Taiwanese food, you so have to go to this place at World Square on Level 1, it is such a good restaurant. And yes we need to go out and have Taiwanese food together. We might be able to find some really good food so you will end up liking Taiwanese food.

I've started using flax seed because I saw the idea on your blog. My husband LOVES it and we really don't taste a difference. You're right though...you have to been in the right mindset and do it for yourself, not because others want you to. Keep posting!

Nat, I use flax seed in everything, and the psyllium in lots, my kids dont notice it and I love the feeling of making my family healthier. Have you read the book IN DEFENSE OF FOOD by Michael Pollan? It's a great book and has heightened my awareness of so many things I have been feeding my family that maybe I would steer away from, and some things that I've been doing just right. I will say that I am not a believer in the low or non fat stuff, so many studies have been done that have said that the fats that they are using in place of the original ones are worse for our bodies (trans fats are a good example of this). I feel more comfortable eating things that I know where they came from (natural ingredients) than something that is formulated in some lab.

I have that Deceptively Delicious cook book, it's good (the brownies with spinich and carrots are awful though). It was a good way for me to get ideas on how to add things to lots of our foods to up the nutrition.

I love the healthy alterations you post to your recipes. I try to substitute things all the time. I've been a little scared to venture into the whole flax seed thing. I did buy some, but then Dr. Oz told me I had to actually grind it up to get the health benefits from it and that was a bit overwhelming for me. Do you grind yours? Can you buy it that way?

I'm with you and I can relate. I have been trying to make the foods I cook healthier as well. I have been using wholemeal flour instead of white, a bit less sugar or using raw instead and adding pumpkin seeds as my daughter tried them at my sister's and loved them. I have also been reading up on omega 3 and now sneak it into my kids milo.

For Mothers Day I brought myself a non-stick scanpan so I don't have to cook with oil as much anymore.

Interestingly, I have also started exercising more and now swim on a regular basis and if time avails always walk my son to and from school.

I love flax seeds too. We have been using them for a long time. I first used them to get my omega 3 fatty acids since I don't like fish, but they have so many other benefits too (lignans and fiber). I think they make most recipes better. Anyway, I am happy you are becoming a health nut because I am kind of a crazy one myself and I can't wait to pull from some of your ideas. Just watch out though because you can let it go into a spiral and you might become a vegetarian soon. That's what happened to me and I have never felt better!

Jenni, a vegetarian?! I'm not sure about that, I love health food but I gotta have my meat! And chicken, and fish... We'll see. Once again, I do hope to give you some new ideas but it sounds like I am singing to the choir on this one as well.
